On the Daily: Rice & Stew

Hello everyone!

This is a new series we are coming up with featuring meals we eat on a daily basis. This way you will be able to see different aspects of our lives and how we eat a lot different cultural food, Nigerian , Canadian, Indian, Korean, Chinese and many more! This way we hope it will also inspire you to dive into the different cultures around you, and enjoy their cuisine.

Today’s feature is rice and stew. This is a Nigerian meal, that we eat quite often! I can tell you if you have met any Nigerian and asked them “what meal do you eat a lot”, the answer is guaranteed to be rice and stew for the most part.

I have been eating rice and stew almost all my life, and I can not say I am ever tired of it! Rice is my energy, and stew is … my fuel! They go so well together! If you are wondering what stew is, do not worry, we will be having a recipe for that very soon (keep a look out). I think one of the reasons I do not get tired of rice and stew is because I make sure to add different toppings, like fried plantains, eggs, cucumbers as seen in this picture. This combination is superb, and such a filling dish!

 

Ingredients:

  • Rice
  • Nigerian stew
  • Fried plantain
  • Cucumber slices
  • Boiled egg
